A year ago, my family took a trip to Florence. It sparked the inspiration for our Fall ’17 Collection, but more importantly it was filled with memories that I will cherish for many years to come. My absolute favorite part—learning to make pasta like real Italian chefs in the beautiful Tuscan countryside with my boys. My middle son really took to it, and he’s made our favorites here at home!

- 2/3 cups all-purpose flour
- 2/3 cups semolina
- 3 eggs
- 1 teaspoon of extra virgin olive oil
- Pinch sea salt
- Cold water
It’s that easy! But we did learn that the weather can be a big factor, so we’ve learned to adjust the water based on how humid it is here in Austin, TX.
A Few Favorite Adaptations:
We’ve found more from our favorite chefs back home!
And one of our favorites as the weather cools in the fall: Péché’s Butternut Squash Ravioli.
